Chef José honed his craft in Guadalajara, learning techniques and flavors that blend Mexico’s indigenous roots with contemporary creativity. Rather than a conventional culinary path, he followed curiosity — mastering sashimi-style preparations, slow-braised meats, and bold Baja-inspired flavors that reflect the Pacific coast.
Today, in the heart of Todos Santos, Baja California Sur, Chef José brings this philosophy to life.
